 Curry Seafood in Coconut

 

Ingredients :

* 1 Young coconut

* 4-6  medium-sized  shrimps

* 50 g. Squid cut into thin pieces

* 1/2 tbsp  fish fillet cut into thin pieces

* ½ -1 tbsp red curry paste

* 1 egg

* 100 g.  coconut milk

* 1 tablespoons fish sauce

* 1 teaspoon white sugar

* 1 tablespoon red chili, finely chopped

* 1  tablespoon rice flour

* 2 kaffir lime leave, sliced thinly

* 1 tablespoon coriander leave
* 2 tablespoon sweet basil leaves
* 2 tablespoon Chinese cabbage or carrot

      Directions

* Prepare the topping by heating coconut milk (1cup) in a pot over low heat. Wait until boiling, add rice flour and a pinch of salt . Stir until mixed well then remove from heat.

* In a big bowl, mix together fish, shrimp, squid, red curry paste, egg, fish sauce, and sugar. Stir until all ingredients mixed well. Then cooked it in medium heat pan until cooked 50%.


*In young coconut, put sweet basil leaves and Chinese cabbage first, Fill the mixture in young coconut and then place the shrimp, kaffir lime leave, Thai red chili and topping on the top.

*Stream it 15-30 mins.
