Chicken Satay and peanut sauce
Satay is a popular dish in Thailand. Usually served with peanut sauce. Thai satay have various recipes, from chicken, beef, and pork, to vegetarian variants that employ soy protein strips or tofu
Ingredients:
*500 gram Chicken or Beef / sliced
*250 gram coconut milk
*1/2 tea spoon coriander seed
*1/2 tea spoon Cumin seed
*1/2 tea spoon yellow curry powder
*1 tea spoon Turmeric powder
* 1 tea spoon of salt
Direction :
*In a medium bowl, mixed together the coriander seed, Cumin seed, yellow curry powder, Turmeric powder, salt ,white sugar, coconut milk , Add the chicken / sliced or beef /sliced, and stir to coat. Cover, and refrigerate for at least 30 minutes, and up to 2 hours
*Grill for high heat. Thread the chicken strips onto skewers. Discard marinade. Grill chicken for 2 to 3 minutes per side, until no longer pink. Time will depend on how thick your strips are. Transfer to a serving plate, and garnish with cilantro and peanuts. Serve with peanut sauce for dipping.
Peanut sauce : Ingredients : (5-10serving)
*1 table spoon Massaman curry paste
*500 gram coconut milk
*2 table spoon Tamarin sauce
*2 table spoon Palm sugar
*3 table spoon Peanut butter
* 3 table spoon Roasted ground peanut
Direction :
* In a medium bowl, mixed together Tamarin sauce, Palm sugar, Peanut butter and roasted ground peanut.
*Warm up coconut milk in pan and add Massaman curry paste to stir until it smells nicely. When it boiling add the flavoring, mix it well until sauce get thicken a bit then add peanut before turn off the heater.
Cucumber salad : Ingredients:
*2 tbsp Cucumber / sliced
*1 tbsp Purple onion / sliced
½ tbsp. Large Chilli
½ tbsp. white vinegar
A pinch of salt
½ cup of water
Direction
*Mix all ingredients in a pot and stir them in over medium heat until sugar dissolve . Let it cool down before you serve.
*Sliced cucumber, purple onion and chili, put it in the sauce cup and add sauce 1 tbsp 0n top.
